Finnish Salmon Soup
Ingredients
- 1/2 kg potatoes
- 1/2 kg salmon (real fresh salmon is best)
- 1 small onion
- 1 dl milk or cream
- 1 tbsp margarine or butter
- some dill
- water
Instructions
Serves 2 to 4. Depending on what piece(s) of salmon you happen to buy, you might first have to take out the bones. You don't have to skin it, however; just clean it. Then cut the potatoes (peeled) and the onion into small pieces and place them into a cooking pot along with the salmon. Fill the pot with enough water to cover everything. Cook (carefully) until the fish is totally cooked. Add milk/cream and butter. When the butter has melted add the dill (cut) and serve.
