    Leftover Bean Soup with Ham

    Bean Soup with Ham is great if you have leftover ham or if you just want a simple soup to keep you warm. This simple recipe will have you slurping up bowl after bowl. Soup recipes are the best when they are this easy.

    Ingredients

    • 1 cup small white beans
    • 4 cups water
    • 1 1/2 pound smoked pork hock or ham bone
    • 1 1/2 cup celery, chopped
    • 1 cup onion, chopped
    • 3/4 teaspoon thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 bay leaf

    Instructions

    1. Rinse beans and discard any shriveled or discoloured ones. Place beans in a large saucepan, add water, cover and bring to a boil for 2 minutes over high heat. Remove from heat and let stand for 1 hour to soak beans.
       
    2. Add pork hock or ham bone, celery, onion and seasonings. Cover and simmer for 1 - 1 1/2 hours or until beans are tender.
       
    3. Remove pork hock and separate meat from the bone. Chop meat coarsely and add back to the soup.
       
    4. Remove bay leaf and discard. Remove about 1 cup of the beans and mash or puree and add back to the soup. Taste and adjust seasonings, if necessary.
