Mexican Noodle Soup (Sopa de Fideo)
"Sopa de Fideo translates as "Noodle Soup" from Spanish and basically it's a traditional Mexican tomato based noodle soup. You can use fresh or canned tomatoes, it doesn't matter. They just have to be juicy! Talking about the noodles, this recipe has a special method of preparing them. They are not boiled, instead the noodles are fried before adding them to the liquid! This simple trick makes everything so much better. And that's not everything. This Mexican soup is also packed with the flavors of cumin, cilantro, avocados and lime!"

I am so happy that I came across this recipe today! It really does have authentic flavor from the spices and the toasted pasta. The chicken and tomato base for the broth is heavenly - I actually use this flavor base for Italian chicken vegetable soup and "pasta broto" as well. And everyone can dress theirs up how they want with the variety of toppings.
