    Refried Bean Soup

    Ingredients

    • 1/2 pound bacon
    • 1/2 cup bell pepper
    • 1/2 cup onion
    • 1/2 cup celery
    • 1 can (15 oz) Rotel tomatoes with green chiles
    • 2 cans (15 oz) refried beans
    • 2 cans (15 oz) chicken broth
    • water
    • cajun seasoning
    • hot sauce to taste
    • grated cheese
    • tortilla chips

    Instructions

    Cook the bacon until crisp. Drain and crumble. Saute the bell pepper, onion and celery until soft in a little bacon fat and drain. Add tomatoes, beans and broth. As water as needed to adjust thickness. Add cajun seasoning and hot sauce to taste. Simmer for 30 minutes. Serve with grated cheese and tortilla chips.
