Sarma Cabbage Roll Soup

"Sarma soup, or Cabbage Roll Soup, is a hearty, filling, and delicious meal that your whole family will enjoy. I like to make the rice on the side, so the leftovers hold up better! This can be made in a dutch oven or adapted for your slow cooker. I wish that picture did the meal justice. I went back TWICE MORE for more of those cabbage rolls. And somewhere between trip 1 and 2 I started my, “OMGosh WHO made these and what do I need to do to get the recipe?” quest. After being informed pretty quickly that these were NOT cabbage rolls, but in fact were “sarma”, I knew I’d found food people, like me."

Deconstructed cabbage rolls is a right-on description of this. My mother used to make cabbage rolls fairly frequently when I was going up, so I immediately started nodding at the list of ingredients. Carrots are new to me, though. I don't remember my mom ever incorporating carrots into the recipe. I've never made actual cabbage rolls on my own, though it's something I'd like to try since it doesn't look overly difficult. I'm glad I came across this recipe since it allows me to recall some tastes from my childhood.

It was a chilly day here today so we were all feeling like something warming and comforting for our evening meal and this Sarma Cabbage Roll Soup filled that need perfectly! I only cooked the cabbage for about 5 mins because we like it to still be crunchy and, following the recommendation, we added some extra chili. It was really very good, tasty, filling and definitely well worth making again soon.

I don't think I've ever had cabbage rolls with carrots in them before, but for a tomato based soup it totally makes sense! When I make a tomato sauce from scratch I always add a carrot - it seems to bring out the sweetness in the tomatoes and reduces the acidity. (I think it's an Italian thing!) This soup looks like it makes a lot, but I'm sure I won't have any trouble using it up!
