Slow Cooker Black Bean Soup
"This Slow Cooker Black Bean Soup features the flavors of seasoned black beans…in creamy soup form. It’s delicious on a chilly winter day! If you like the seasoned black beans at Mexican restaurants, then you definitely need to make a batch of this soup! While the base flavor of this soup is delicious (it truly channels seasoned black beans from a Mexican restaurant), the fun part comes in with the toppings. I opted for a spoonful of sour cream, additional chopped cilantro, some reserved diced tomatoes and sunflower seeds. (On a side note, sunflower seeds are an amazing topping on salads and soups!) With a little bit of prep work in the morning, you can walk away for the rest of the day. When you come back around dinnertime, you’ll find a flavorful and delicious soup waiting for you! "
