Spicy Baked Potato Soup

Ingredients
- 1/2 cup unsalted butter
- 3 slices white onion, chopped
- 1/3 cup all-purpose flour
- 2 cups water
- 2 cups chicken stock
- 2 teaspoons basil
- 3 tablespoons hot sauce
- salt and pepper to taste
- 1 1/3 cup potato flakes
- 2/3 cup milk
- 2/3 cup heavy cream
- 3 potatoes, baked
- sharp Cheddar cheese, shredded
- bacon, crispy and crumbled
- scallions, finely chopped
Instructions
- Melt butter in a frying pan and saute the onions. Add flour, stirring constantly.
- Add water and chicken stock and keep at medium heat.
- In a separate bowl mix basil, hot sauce, salt, and pepper. Set aside.
- To the cooked onion mixture, add potato flakes, milk, heavy cream, and bowl of spices and let simmer.
- Cut baked potatoes into bite sized chunks, add to soup. Cook until all ingredients are heated through, about 10 minutes.
- Serve in bowls topped with cheese, bacon and scallions.
