- 1 tablespoon olive oil
- 450 grams sweet potatoes, peeled and cut into chunks for cooking
- 1 red chilli, chopped
- 1 lemongrass stalk, crushed to release the flavour
- 2 tablespoons Thai red curry paste
- 750 milliliters fresh chicken stock, or water with 2 stock cubes
- 150 milliliters coconut cream
- 2 stalks fresh coriander, chopped
- 1 lime
- 1 teaspoon fish sauce
