Spanish Eggplant
Ingredients
- 4 slices bacon, fried until crisp
- 1 medium onion, chopped fine
- 1 green pepper, chopped
- 1 cubed, pared eggplant
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 6 to 10 oz. can tomato puree
- 1 cup water
Instructions
Saute onion and pepper until golden in bacon drippings. Add the rest of the ingredients and cook covered 5 to 10 minutes (until almost tender). Pour into 1 1/2 quart baking dish. Top with 1 cup grated cheese, crumb sauce (buttered bread crumbs and crumbled bacon bits). Bake uncovered in 350 degree oven 20 to 30 minutes. 6-8 servings.

I thought this is just an ordinary eggplant recipe but when I read that it's first sauteed and baked then it became a complicated eggplant recipe. I became intrigued and want to try it any time. My family loves eggplants so this is a new and exciting recipe for all of ua.
