Spanish Pollo a la Catalana

Ingredients

  • 1 chicken, 21/2 - 3 lb weight
  • 4 tablespoons olive oil
  • salt, pepper
  • 3 tablespoons sherry
  • 1 onion, finelly chopped
  • 1 clove garlic, crushed
  • 1 large red pepper, sliced and seeded
  • 4 tomatoes, skinned and chopped

Instructions

Cut the chicken into portions and fry them in the oil until golden brown. Sprinkle with salt, pepper and sherry. Remove the chicken and, in the same pan, fry the onions, garlic and red pepper for 5 minutes. Add the tomatoes,and replace the chicken. Cover and cook over gentle heat for about 25 minutes, until the chicken is tender. Check the seasoning before serving.
