I get it. This is a take on the loaded white potato recipe. I think this is a smart idea. Individual servings are always the easy route. I know my family will love it.

If nothing else, this will save on at least one dish that must be washed at the end of the meal. This is similar to a sweet potato recipe I make every year but this way it is served in the skin of the potato and no cleanup. Perfect idea!
