I'm not quite sure why this recipe is labeled as "vegan stuffed cabbage casserole" in the link, as this obviously has ground beef in it. But this is a fantastic dish to try, and still quite healthy. The cabbage rolls I am used to usually get quite dull, almost brown in color after the long cooking process, and this looks much brighter, fresher, and more colorful!
