Bubble and Squeak
Ingredients
- potatoes, cooked and cold
- cabbage, cooked
- parsnips, cooked
- vegetable Shortening
- 1 onion, chopped
- salt and pepper, to taste
Instructions
Chop up desired amount of cooked vegetables (enough to fit your frying pan), In a large pan, greased with vegetable shortening, fry the chopped onion until soft. Then add the chopped vegetable an mix together. Season with salt and pepper. Fry and press down in the pan. When the underneath has become brown and crisp turn over and do the other side. It may be necessary to slice to turn it over. When it is hot and crisped on the underneath serve with cold meats or fried eggs. You will appreciate that this kind of recipe has infinite variations but always tastes delicious. Serving suggestions: Cold meat or fried eggs
