Such wonderful ingredients, cauliflower, mushrooms, chickpeas and arugula (called rocket here in South Africa) all on a delicious bed of quinoa. Sheer heaven! It is really easy to make too, no fiddling and nothing complicated at all. We had ours as a side dish with a barbecue we had over the weekend but I would be more than happy to have it as a meal on its own.
