    Easy Corn Fritters

    Just like the kind ma used to make. This wonderful vegetable recipe goes well with any dinner and is quick and easy. A great way to get kids to eat their vegetables, try these Easy Corn Fritters.

    Ingredients

    • 1 cup fresh or whole kernel canned corn, drained and chopped
    • 1/2 cup plus 2 tablespoons of flour
    • 1 egg
    • 1/2 teaspoon baking power
    • 1/2 teaspoon salt
    • 1 egg white beaten stiff

    Instructions

    1. Combine corn and egg. Sift together flour, baking powder and salt. Stir into the corn.
       
    2. Fold in egg white.
       
    3. Drop from a tablespoon into fat heated to 370 degrees.
       
    4. Cook until lightly browned. Drain on paper towel.

    What egg???

    Wondered the same thing. Are you using the egg yolk from the whipped egg? I hate incomplete recipes.
