Easy Corn Fritters
Just like the kind ma used to make. This wonderful vegetable recipe goes well with any dinner and is quick and easy. A great way to get kids to eat their vegetables, try these Easy Corn Fritters.
Ingredients
- 1 cup fresh or whole kernel canned corn, drained and chopped
- 1/2 cup plus 2 tablespoons of flour
- 1 egg
- 1/2 teaspoon baking power
- 1/2 teaspoon salt
- 1 egg white beaten stiff
Instructions
- Combine corn and egg. Sift together flour, baking powder and salt. Stir into the corn.
- Fold in egg white.
- Drop from a tablespoon into fat heated to 370 degrees.
- Cook until lightly browned. Drain on paper towel.

Wondered the same thing. Are you using the egg yolk from the whipped egg? I hate incomplete recipes.
