Easy Mediterranean Potato Salad
Potato salad recipes are an essential dish at any potluck. Mediterranean Potato Salad is a great spin on your average potato salad. Loaded with carrots, celery, cucumbers, and Kalamata olives, it is then seasoned with Mediterranean seasonings. Full of flavor, it may become one of your favorites.

Ingredients
- 1 pound new potatoes
- 2 large carrots
- 2 celery sticks, sliced to half-moon shapes
- 1 large garlic clove, minced
- 2 little cucumbers, sliced
- 1 cup pitted Kalamata olives
- 2 tablespoons extra virgin olive oil
- zest and juice from1/2 lemon
- pinch cayenne pepper
- salt and pepper to taste
- 1 teaspoon zaa'tar Mediterranean spice blend (optional)
Instructions

Preheat oven to 425 degrees F

Cut potatoes and carrots to bite size pieces. Cover them with olive oil, salt and pepper and arrange in one layer on a tray.

Pop them into oven for 30 minutes or until fork tender.

Remove potatoes and carrots from the oven and cool.

In large bowl mix potatoes, carrots, celery, cucumbers, garlic, Kalamata olives, zest and juice from1/2 lemon, cayenne pepper and fix salt if needed.

Well I suppose if you can't keep the carbs out of a recipe, at least get rid of the mayo. This recipe looks delicious, and I think it would make a great side dish for a weeknight dinner of hamburgers. I love the combination of Mediterranean flavors and the simplicity of this recipe. You could even add cauliflower and broccoli to this recipe.
