Hungarian Zucchini in Dill Sauce
Hungarian Zucchini in Dill Sauce is a delicious summer squash recipe that is perfect for those warmer months. The dill sauce in this recipe adds a tantalizing flavor that will have you coming back for seconds.
Ingredients
- 2 pounds zucchini or summer squash
- 1 teaspoon salt
- 2 tablespoons vinegar
- 2 tablespoons shortening, oil, butter, or margarine
- 2 tablespoons flour
- 1 tablespoon paprika
- 1 tablespoon finely chopped fresh dill
- 1 teaspoon finely chopped onion
- 1/2 cup water
- 1/2 cup sour cream
Instructions
- Grate the zucchini and sprinkle with salt and vinegar; let stand for 20 minutes.
- During this time, heat the shortening, add flour and stir constantly until mixture is light brown.
- Remove from heat and add paprika, dill and onions; pour in water and mix until a smooth sauce is formed.
- Then add the zucchini which has been squeezed by the handful to remove excess liquid.
- Mix carefully and add more water if too dry.
- Cook over low heat until barely tender.
- Fold in sour cream and blend until smooth.
