Poor Man's Baked Taters
Budget recipes never tasted so good and you really can't go wrong with potato recipes, especially if it includes cheese. So make the family happy with a dinner that includes these Poor Man's Baked Taters.
Ingredients
- 4 medium even potatoes
- 1 salt
- 3 tablespoons melted butter
- 2 teaspoons dried chives or dill (you could use 1 tablespoon fresh herbs instead)
- 1 1/2 teaspoon caraway seeds or cumin
- 4 tablespoons grated Cheddar cheese
- 1 1/2 tablespoon Parmesan cheese
Instructions
- Preheat oven to 425 degrees F.
- Peel potatoes if the skin is tough, otherwise just scrub and rinse. Cut potatoes into thin slices but not all the way through.
- Use a handle of a spoon to prevent the knife from cutting all the way. Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with sale and drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes.
- Remove from oven. Sprinkle with cheeses. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork.
