Roasted Potatoes with Sea Salt & Thyme
Ingredients
- 8 new (red) potatoes
- 1/2 cup olive oil of good quality
- 1/4 cup sea salt (may also be know as kosher salt, but not rock salt)
- Thyme, preferably not the powdered kind
Instructions
Cut potatoes into quarters, skin on. Place in large bowl and drizzle with olive oil, carefully turning the potatoes by hand to coat completely. Place on baking sheet (cover sheet with parchment paper if you have it), skin sides up, then sprinkle with sea salt and thyme. Bake in 375 degree oven for 20 minutes for uncooked potatoes, 5-15 minutes for cooked. (Depending on how cooked and how big they are). Break one open to test for doneness, they should still be firm, but soft enough to eat. Potatoes will be slightly wrinkled on the outside and lightly brown when done. Notes: These are really good the next day too, and travel extremely well. To conserve time, potatoes can be slightly parboiled or cooked in microwave first. They should still be firm.
