    Scalloped Tomatoes

    Ingredients

    • 4 large ripe Tomatoes
    • 1 cup fresh bread crumbs
    • 2 Tbsp minced green onions
    • 1/2 tsp dried thyme leaves
    • 1/4 tsp pepper
    • 1/4 cup chopped parsley
    • 1 1/2 cup shredded low-fat cheddar cheese
    • 1 to 2 Tbsp Olive oil
    • Paprika
    • Fresh basil leaves
    • Fresh Tomato slices

    Instructions

    Slice the tomatoes about 1/2 inch thick Combine bread crumbs, green onions, thyme, salt, pepper and parsley In a 1 1/2 quart casserole, layer tomatoes breadcrumb mixture and cheese. End with sprinkling of bread crumbs and cheese. Drizzle with olive oil. Sprinkle with paprika and cover. Bake at 350F for 30-35 min. Cover can be removed for last 10 minutes. Garnish with tomatoes and basil leaves.
