Ingredients
- 1 can (17-ounce) sweet potatoes
- 4 tablespoons brown sugar
- 2 egg whites, beaten
- 4 tablespoons margarine, melted
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/2 cup pineapple, drained
- mini marshmallows

Instructions

Combine sweet potatoes, brown sugar, egg whites, margarine, salt, cinnamon, and pineapple in a mixing bowl; beat well.

Butter baking dish; place half of mixture in dish and dot with marshmallows.

Add remaining sweet potato mixture to casserole dish.

Cover and refrigerate overnight if desired.

When ready to serve, preheat oven to 350 degrees F and bake for 40 minutes.

Remove from oven, dot with marshmallows and bake until golden brown, about 10 minutes.

Sweet potato desserts are really great. I've had sweet potato pudding which is made with a bit of grated coconut at the top. It was quite tasty so I could imagine this casserole would be tasty as well. It's also great to see marshmallows being used in a dessert recipe other than smores.

I will have to give this a try. I have never tried sweet potato casserole with pineapple before. The pineapple doesn't make it too sweet? I usually make this with fresh sweet potatoes or yams. How many would I need for this recipe? I also like to add some pecans to mine.

Marshmallows-- yuck.They are too easy to burn and ruin the taste.

This was an awesome twist on a Thanksgiving favorite! The pineapple mixed with sweet potato was delicious! Next time I'll mix marshmallows with the sweet potatoes, not just sprinkle on top, to make the dish thicker.
