Spaghetti Squash
Ingredients
- 1 spaghetti squash
- 2 cups shredded fresh Zucchini
- 1/2 cup melted butter or margerine
- 1/4 cup brown sugar
- 3 dashes nutmeg
- 1/2 tsp salt
- 1/2 TBS pepper
- 1/4 to 1/2 cup fresh grated Parmesan/Romano Cheese blend
Instructions
Preheat oven 350 degrees. Cut spaghetti squash in half lenghtwise. Place open face down on a greased cookie sheet (greased w/ butter or margerine) Bake for 1 to 1-1/2 hour (or until inside is soft). Scoop out insides into a large bowl. Add all ingredients except cheese into bowl and mix together. Place into a casarole dish, sprinkle cheese on top. Bake for another 1/2 hour at 350 degrees.

This would be an excellent dish for Thanksgiving dinner. Although it took an hour and a half to cook, it was delicious and very easy to prepare. The zucchini in it was an added bonus, it made it a not-so-mushy dish and the cheese baked on top gave it a nice tasty flavor. This was better than baking an acorn squash with butter and brown sugar.
