Super Sweet Potato Casserole
Made with honey and brown sugar this Super Sweet Potato Casserole is perfect for people with a sweet tooth. Serve this tasty casserole recipe as a dessert or as an appetizer. It will fit any part of your dinner party.
Ingredients
- 6 sweet potatoes
- 20 ounces crushed unsweetened pineapple
- 2 tablespoons oil
- 2 tablespoons honey
- 1/3 cup pecans
Instructions
- Preheat oven to 350 degreees F.
- Wrap sweet potatoes in foil and cook in oven for an hour or until tender.
- Unpeel the potatoes and cube them into 1 inch pieces. Put aside in bowl.
- Add crushed unsweetened pineapple packed in juice, 2 tablespoons oil, 2 tablespoons honey to the potatoes and beat with electric mixer until well blended and fluffy.
- Move to an oiled casserole or 9" X 13" baking dish.
- Scatter pecans on top. Bake at 350 degreees F for about 45 minutes or until casserole is bubbling and browning at edges.
