Sweet Potato Casserole
Ingredients
- 2 tall cans (quart size) yams or sweet potatoes in syrup
- 1/2 cup brown sugar
- 1/4 cup drained syrup from the potatoes
- cinnamon to taste
- salt to taste
- 1 bag of mini-marshmallows
Instructions
Drain the liquid from yams or potatoes and reserve about 1/4 to 1/2 cup. Mash the yams or potatoes with a potato masher. Add some reserved syrup, the brown sugar and cinnamon and salt to taste. Place in a large casserole dish and heat at 350 until hot. Cover with the marshmallows ( you dont have to use the entire bag ) and place under broiler to caramelize.
