Sweet Potatoes with Marshmallow Topping

Serves 8-10.
Ingredients
- 2 cans sweet potatoes in heavy syrup (40-oz. each), drained
- 1/2 cup unsalted butter, cut up
- 1 can crushed pineapple, 20-oz
- 1 cup maple syrup, or more
- 1 package large marshmallows, 10-oz
Instructions
- Heat oven to 350 degrees F. Place sweet potatoes, butter, pineapple, and maple syrup in a 9-by-13-inch glass baking dish. Combine well, using a potato masher.
- Place in oven, and bake until bubbling, about 45 minutes. Top with marshmallows, and continue to bake for 15 minutes until marshmallows are soft, but not completely melted.
