Chocolate Chip Cookies
Ingredients
- 1 heaping tablespoon flax meal
- 1 heaping tablespoon Energ egg replacer
- 6-7 tablespoons rice milk or water
- 2 1/4 cups flour
- 1/4 cup soy flour
- 1 teaspoon baking soda
- 1/2 tsp salt
- 1 cup margarine, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 tsp vanilla
- 2 cups vegan chocolate or carob chips
- 1 cup nuts, optional
Instructions
Combine first three ingredients in a small bowl and set aside (this is the substitue for 2 eggs). Combine remaining ingredients in order listed, except chips and nuts. Stir in flax meal mixture. Stir in chips and/or nuts. Roll dough into small balls and bake on an ungreased cookie sheet for 10-12 minutes or until very lightly browned. These cookies won't get browned nearly as easily as usual without eggs, so don't wait for them to look very brown at all. A better test is to touch the center of a cookie with your finger to see if it gives. If they're still too soft and doughy, bake a few minutes longer. Cool slightly, then move them to a wire rack to cool completely. Makes about 5 dozen
