The corn quesadilla looks amazing! My partner and I try to eat vegetarian two to three days a week so this would be perfect for a weekend lunch with some chips as a weekend comfort food. Quick, easy and tasty, cant wait to try this out at the weekend, I think it could become a regular meal within our house)
