Dalia Pulao
"Dalia Pulao is a healthy twist to the regular rice pulao recipe which is prepared with white rice. Instead of using rice for the pulao use broken wheat aka dalia. Broken wheat is nutritious, high in iron and fiber. Healthy dalia pulao is a fantastic healthy dinner recipe.Why? It is quick to prepare, nourishing and fulfilling. And the best part is this pulao is cooked in a pressure cooker which saves lot of time too in the kitchen during a busy weekday."
Use any combination of seasonal vegetables and greens to make this pulao. Serve it with your favorite raita, papad and chutney/salad for a complete meal. Everybody in the family would love it to the core. Healthy dinner recipes need not to be boring and dull. They can be enjoyed by the whole family together. And the leftovers can be easily packed next day for the office or school lunchbox.
It is not necessary to spend money on expensive gourmet grains to eat a healthy diet. The local and easily available millets and grains make an excellent choice for healthy salads and main-course. Ingredients
- 1 cup broken wheat (dalia)
- 1 medium-size onion, finely chopped
- 1/4 cup green peas
- 1 small-size carrot, finely chopped
- 1/4 cup cauliflower florets
- 1/2 teaspoon turmeric powder (haldi)
- 1/2 teaspoon red chili powder
- 2 tablespoons olive oil
- 1 1/4 cup water
- coriander leaves, finely chopped for garnish
- salt to taste
Instructions

Dry roast the broken wheat over low heat untll it gets aromatic, stirring the broken wheat continuously while roasting or it might burn.

Heat olive oil in a pressure cooker. Add chopped onion and saute until it is translucent.

Add all the chopped vegetables and fry for three to four minutes. Add salt and spices and mix.

Add roasted broken wheat and water. Mix well.

Close the lid of the pressure cooker. Cook the pulao for two whistle over medium heat.

Let the steam release naturally from the pressure cooker. Fluff the pulao with a fork.

Transfer the pulao to a serving bowl and garnish with coriander leaves.

Serve Dalia Pualo with warm raita.
