Potato Tacos
"Spicy and crispy, these potatoes are perfect to make a vegan taco night. You don’t need meat to have good tacos, these potato tacos are better than any taco I had before I was vegan. Taco seasoning makes the potatoes spicy and these are baked so that there is less prep work and they do not have as much oil as if they were cooked on the stove top. These are ready to serve in less than one hour for a quick and easy weeknight dinner."

Ingredients
- 4 large Russet Potatoes
- 2 tablespoons Olive Oil
- 1 tablespoon Taco Seasoning

Preheat oven to 425F. Wash potatoes and dice into 1-inch peices.

Place potatoes into a baking dish, mix with olive oil and taco seasoning.

Bake for 40-45 minutes. Serve with tortillas.
