French Mayonnaise
"Mayonnaise is one of the basic sauces. Any chef would tell you, that if you can make this well you got skills! French Mayonnaise is my version of one of the mother sauces. As for making mayo, the use of fat to bind the rest of the ingredients is what it is all about. You can use any oil, that you like. In this recipe I have used vegetable oil to bind the rest of the ingredients. And you would be surprised how much fat can one little egg yolk absorb. So next time you need to use mayonnaise in any recipe, do try making it fresh and use this French Mayonnaise recipe."
