If you're looking for a tater tot casserole with no meat that you can serve for breakfast, you came to the right place. This one makes our taste buds tingle. Made with tater tots, eggs, bell pepper, green chilies, and more, this breakfast casserole has a little Southwestern flair, which goes perfectly when served with a side of salsa.
This is perfect for all the vegetarians in your life or just when you're feeling like eating something a little lighter that still has plenty of flavor. Kids will love this casserole too! Although you may want to omit the green chilies if you have picky eaters or kids who don't like spicy things.

Ingredients
- 2 tablespoons unsalted butter
- 1/2 large onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 12 eggs
- 1/2 cup cream
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1 (4.5-ounce) can chopped green chiles
- 1 1/2 cup shredded cheddar cheese, divided
- 3 cups frozen tater tots
- chopped fresh cilantro
- salsa verde
- sour cream
- hot sauce

Instructions

Heat oven to 350 F. Grease a 9x13-inch baking dish with cooking spray.

In a large skillet melt the butter over medium heat. Add the onions and bell peppers to the skillet and saute until softened about 7-8 minutes.

In a large bowl whisk the eggs with the cream, salt, and pepper. Mix in the cooked onions and bell peppers. Add in the green chiles and 1 cup of the shredded cheese.

Pour the mixture into the baking dish, add the tater tots and sprinkle remaining cheese on top.

Bake for 35-40 minutes until the eggs are set and the cheese is melted.

Top with chopped cilantro and serve with salsa, sour cream and hot sauce.

This Meatless Breakfast Tater Tot Casserole has made it to the list for Easter breakfast this year. I will probably leave out the green chilies because of the kids, but other than that, the recipe looks yummy, and easy to prepare. I think it will be a well received addition to this years menu.

I love, love, love this recipe! Usually, I would try to make it more hearty by adding meat but this is perfect just the way it is. I think if I had one thing to change it would probably be to use some freshly roasted green chile peppers instead of the salsa verde. Either way, I'm sure would be delicious though and I can't wait to try it!

This breakfast casserole was sooo yummy! After one bite, I went back and got a second scoop. The combination of potatoes, eggs, cheese, and veggies was perfect, and the tater tots were a fun touch!
