    "Cheese is able to cover a multitude of sins. There aren’t many dishes that can’t be improved by throwing some cheese at them. Cheese goes with loads of things, if not one variety then another. Spinach is usually paired with ricotta and stuffed into pasta, filo and pies. This is quite an improvised dish, the recipe based on a fridge dive. But it turned out so good I wanted to make it again and again. And one thing is certain: if this doesn’t entice your kids to spinach, nothing will."

    I absolutely love spinach and we also have a tonne of it growing in the garden as well, I also love cheese as well so this dish sounds amazing to me! I cant wait to try this out during the week. I hope this recipe is as easy as it says to make.

    I love the idea of starting the day off with a vegetable based dish - you could serve this with a couple of fried eggs for a protein packed nutritious breakfast! This would make a great vegetarian main course for dinner too, and as a side to any sort of meat. I found that a lint free towel works best for squeezing the spinach, as paper towels always seem to make a mess of things.
