Sweet Potato Kale and Brussels Sprouts Winter Bowl
"This winter bowl is the perfect cure to the seasonal blues. Packed with delicious veggies and ever so slightly sweetened with maple candied walnuts and cranberries! This winter bowl is one of those ways to fight a hard winter. Perfectly bringing together the seasons favorites including Brussels Sprouts, sweet potatoes and kale. But also backing a surprising sweet twist with maple candied walnuts (a variation of my Maple Candied Almonds) and dried cranberries. It doesn't disappoint!"

- 1 pound brussels sprouts
- 1 pound sweet potato, peeled and sliced
- 2 tablespoons olive oil
- sea salt and cracked black pepper
- 1 tablespoon unrefined coconut oil
- 1 tablespoon pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup walnuts
- 4 stalks of kale, thinly sliced
- 4 cups fresh spinach, thinly sliced
