    Vanilla Cake

    Ingredients

    • 1/2 cup margarine
    • 2 3/4 cups unbleached flour
    • 2 1/2 tsps baking powder
    • 1/2 tsp salt
    • 2 tsps egg replacer
    • 1/4 cup water
    • 3/4 cup soy milk
    • 1/2 cup water
    • 1 3/4 cup sugar
    • 2 tsps vanilla or lemon extract

    Instructions

    Spray 2- 8" round cake pans with cooking spray, or lightly oil and flour. Preheat oven to 375 degrees. Combine flour, baking powder, and salt and set aside. Mix egg replacer and 1/4 cup water and set aside. Mix soy milk with 1/2 cup water and set aside. In a large bowl with an electric mixer beat margarine till creamy, gradually adding sugar till well creamed. Beat in vanilla. Add dry ingredients alternately with soymilk mixture to sugar mixture, beating after each addition, beginning and ending with flour mixture. Beat in egg replacer. Divide evenly into prepared pans. Bake for approximately 30 to 35 minutes. Remove from oven and let cool on cake racks for 10 minutes. Remove from pans onto rack to complete cooling.
