Asian Chicken Salad
Marinated in the dressing for four hours, the chicken in this recipe is full of flavor when cooked. The salad includes cabbage, carrot and rice noodles to complete the Asian theme.
Ingredients
- 1 cup soy sauce
- 2 boneless skinless chicken breasts
- 1 cup rice vinegar
- 1/2 cup brown sugar
- 1/4 cup sesame oil
- 2 teaspoons ginger
- 2 teaspoons garlic
- 4 green onions, minced
- 1 bunch cilantro, minced
- 1 teaspoon chili paste
- napa cabbage
- carrot peel
- cooked rice noodles
Instructions
- Mix together soy sauce, rice vineger, brown sugar, sesame oil, ginger and garlic.
- Marinate chicken breast in dressing for 4 hours.
- Cook on grill or broil until no longer pink.
- Mix together green onions, cilantro, chili paste, cabbage, carrots, and cooked rice noodles for salad.
- Serve grilled chicken on top of salad with fresh dressing drizzled over.

We had this as a light lunch over the weekend and, oh my word, it was DEEEEEELICIOUS!! In fact it was so good that I have been thinking about it all week and I am thinking about making it for some friends who are coming round for some lunch in a couple of weeks. Do try it, it is exceptionally good!
