I'm drawn to colorful salads. I love this salad it has a little bit of carbs, a little protein from the beans, lots of vitamins from the avocado, tomatoes, and onions plus its very savory and easy to throw together. All that's left is a sweet, tangy lemon dressing to give this salad that kick that it needs.
