Classic Funeral Potatoes

These Classic Funeral Potatoes are our version of a dish that's a common sympathy meal, especially in the American west and in Mormon communities. However, this comfort food classic has also become popular for many other occasions, such as potlucks, holidays, and family dinners.
Funeral potatoes are basically a cheesy potato casserole. They're topped with some kind of crunchy, buttery topping. We're using corn flakes here, but crackers or potato chips are also common. It's a comforting meal that travels well, making it the perfect dish to bring to someone in need of a good meal.

Ingredients
- 2 pounds hash browns (I used two bags of Simply Potatoes hash browns)
- 1/2 cup butter
- 2 (10 3/4 ounce) cans condensed cream of chicken soup
- 1 pint sour cream
- 1/2 teaspoon salt
- 1 tablespoon butter
- 2 cups shredded Cheddar cheese
- 1 1/2 cup corn flakes, crushed
- 4 tablespoons butter, melted
Classic Funeral Potatoes Recipe
Instructions

Mix all ingredients, except cornflakes and 4 tablespoons butter, together.

Put potato mixture into a 9x13 inch baking pan.

Combine cornflakes and butter, and sprinkle evenly over top of casserole.

Bake at 350 degrees F for 40-50 minutes or until heated and bubbly.

I've never had funeral potatoes before, but they sound delicious. How can you go wrong with cheese and potatoes? The corn flake topping is something I wouldn't have thought of, but I love the idea.

This is one of my family's favorite side dishes; my mom makes funeral potatoes whenever we have ham. The corn flake topping is the best part!

Funeral potatoes? I have never heard of a dish referred to as this before. This looks really delicious and surely cant only be served at a funeral of all things? I am very interested in reading the history behind these potatoes and how they came to be called this name.
