Ingredients

  • For the Cocktail
  • 1 (8.4 ounce) can lemon elderflower soda
  • 1 (187 ml) mini bottle Prosecco or Champagne
  • For the Candied Lemons
  • 2 lemons, washed and thinly sliced
  • 1 cup sugar
  • 1 cup water

Instructions for the Cocktail

  1. Combine elderflower soda and Champagne or Prosecco in a glass. Garnish with candied lemons (recipe follows).

How to Make Candied Lemons

  1. Combine the water and sugar in a medium saucepan. Bring to a boil and cook until all of the sugar is dissolved.

  2. Add your lemon slices and simmer until slightly translucent in color. Remove from the heat with a slotted spoon and place on a lined tray.

  3. Refrigerate until firm.

Firstly I love cocktails. I think I will like this one. Cheers to Prince Harry and Meghan! I see Elderflower is the "flavor of the day" on the 19th. This was a nice idea and well done to the Recipelion team for coming up with this theme. Wedding or not I will certainly make this cocktail.

It is almost Royal wedding time. Just another week or so and we can all be right in the action. I still remember watching the wedding of Princess Di and Chaz. This recipe serves only one so you might want to make a large batch at once so you dont have to miss any of the coverage. This would be great for a formal brunch also.
