These Baked Zucchini Bites make a delicious snack, appetizer, or even a great lunch (if you're feeling lazy). These healthy snacks are made from a combination of zucchini, cheese, garlic, and onion. Zucchini bites are very easy to make. Also, these savory small snacks bake a muffin tin. In addition, this recipe for easy baked zucchini can be made gluten free. Simply switch out the panko bread crumbs listed for crushed gluten-free corn Chex (or any other type of gluten free bread crumbs). Serve these bites with a side of marinara sauce for a memorable experience.

These would make a great grab and go breakfast for the kids, and an easy way to check off one of their daily servings of veggies! Since they are great both hot and at room temperature, they are a great option for a brunch buffet, or even to take along on a summer picnic!

These baked Zucchini bites are very nice and proved to be very popular at the drinks party we had for friends and family last weekend. I added a chopped fresh chili to a double quantity of the recipe shown and they were devoured at an incredibly fast rate so I am assuming that they were enjoyed and the one that I managed to grab was very tasty. Tip if you have not used zucchini before do not skip the first step of squeezing out the excess liquid.

I've always pan fried my seasoned zucchini slices, so I'm happy to see a recipe where I can bake them. I like to dip seasoned zucchini slices in marinara sauce, or serve with spaghetti instead of meat.

This baked zucchini bites don't just look delicious they're also gluten-free! Thank you for the idea of making these in advance and storing them in the freezer. These bites would be really great for a quick breakfast on the go.

These look amazing! I would eat these zucchini bites for a light lunch or even breakfast. I'm going to try making a batch and then keeping them in the freezer for last minute meals.
