Easy Italian Bruschetta
This Easy Italian Bruschetta is a delectable appetizer or side dish for any occasion. The toasted bread provides ample opportunity to experiment with different flavor palates. This easy bruschetta recipe uses the traditional toppings of tomatoes and basil. Ripe tomatoes, fresh basil, and good olive oil are a classic combination. Ingredients
- 1 loaf French bread
- 8 ripe Roma tomatoes, diced
- 4 ounces fresh Mozzarella cheese, diced
- Fresh basil leaves, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper
Instructions

Preheat the broiler.

In a bowl, add tomatoes and cheese. Season with salt and pepper. Add vinegar and oil, stirring well to combine. Set aside while you prepare the bread.

Slice bread into thin slices. Place on a baking sheet and lightly drizzle with olive oil.

Broil for 1-2 minutes, just until the edges are lightly golden brown. Be careful not to burn!

Before serving, stir chopped basil into the tomato mixture.

Top each slice of toast with the mixture and serve.

I use Red Wine Vinegar and Garlic but I haven't added Mozzarella Cheese. Nice touch, I'm going to add it next time. I also season my bread with Italian Seasoning.

Yum!! This looks so good! I have a bruschetta recipe that I love to make, but it doesn't include adding cheese or balsamic vinegar, so I'll have to give this one a try!

Bruschetta is hands down my favorite Italian appetizer. I love ordering it at Olive Garden as my meal. My mom makes a similar Bruschetta recipe, but I'm going to have to give this one a go!

This is such an easy appetizer to make for basically any occasion that I'm surprised I've never tried it. The best part is that everything is really fresh so you know the flavor has got to be amazing...and it's not bad for you in any way. Is it best to make it as you need it or can the tomato basil mixture be stored?

Oh my word, BRUSCHETTA!!! And Caprese!! That combination of bruschetta, tomato, mozzarella (preferably buffalo mozzarella balls) and fresh basil leaves is just heavenly! Drizzle a little olive oil and a little basil pesto and the result is the best food in the world. Nothing fancy, no fiddley preparation just wonderful, authentic Italian flavors. Bon apptit!

I just planted some Roma tomatoes last week, so I will save this recipe for late summer when I have more tomatoes than I know what to do with. I love bruschetta with soup or just as a side dish with pasta. Thanks for the simple and delicious recipe I will make over and over again.

I make bruschetta fairly often in the summer when the tomatoes are plentiful. Whether an appetizer or part of a light lunch or dinner, my family always love it when I serve this. I'm eager to try this method as it is a bit different from how I normally prepare it. This is almost like a calabrese salad with the addition of balsamic vinegar. I often use feta cheese, but would reduce the salt since feta is quite a salty cheese already.

This is a great way to use up those fresh tomatoes in the summertime! I grow a wide variety of heirlooms in my garden that are practically every color of the rainbow, and this is an impressive way to display them. Since the topping requires no heat, it is a great way to get the little ones involved in the kitchen! Make sure you use fresh basil for this, since the dried just doesn't taste the same. Sometimes I even toss some diced cooked chicken or tuna into the mix to make it a complete light meal.

My boys love this Bruschetta, thanks to the website that posted.I am wondering if any other type of cheese will be fine or is just Mozzarella that can be used with this recipe? I had a Ukrainian friend, she was using crushed garlic as well but personally, I like it as it is with pitted olives.

You could certainly try this recipe with another type of cheese, however, the reason for using Mozzarella is that it's a firmer cheese that holds up well when you mix everything together. Using a spreadable cheese, pesto, or olive tapenade on the toast, and then topping it with the tomato-basil mixture is another idea!

I absolutely love Bruschetta, and this recipe is awesome. I made this for Christmas Eve. I added a small can of sliced, pitted black olives and it was great!! For Daughter Of Light, I arranged the bread on a pretty platter and put the Bruschetta in a bowl in the middle with a small spoon so they could spoon the Bruschetta onto the bread as they pleased...no worry about "soggy" bread, and it worked out fine.

Yummm this looks good. What a good idea to serve mid morning on Christmas day while everyone is waiting for the meal to be ready. I am going to a make a slight change for myself as I will use the gluten free bread I am going to bake but I am sure it will taste just as good!

I am so going to try this! If you keep the bread slices thin it seems it would be very healthy and I often have these ingredients on hand. I love tomatoes and they are soooo good for you! Is there a way to do these quickly at the last moment so the bread doesn't get soggy?

The Easy Italian Bruschetta is a great recipe. So easy to make and it only takes 30 minutes to prepare. I made it with Grape Tomatoes because I did not have any Roma tomatoes. The case was wonderful. Great idea when you need something in a hurry or just want a quick snack. Pretty light too, because if you use French Bread cut thin, pretty low in calories. I am in love with this recipe. I think I like bruschetta for an appetizer because the bread is light and not very filling when served only with olive oil, tomatoes, and basil leaves. This Easy Italian Bruschetta recipe is fine, not very filling and gives the appetizer a pesto flavor with the addition of the basil leaves. Those who don't like pesto can remove the chopped basil leaves from the preparation. Thanks fort this free recipe.
