Ingredients
- 1 cup panko
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup flour
- 2 eggs, beaten
- 4 zucchini, cut into quarters lengthwise, then in half
- Lime Aioli Dipping Sauce
- 3/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 garlic clove, finely minced

Directions

Heat oven to 425 degrees F. Line a large baking sheet with parchment paper.

In a large bowl combine the panko, Parmesan, Italian seasoning, garlic powder, salt and pepper.

Place the flour in a separate bowl and the eggs in another bowl.

Coat the zucchini in the flour, dip into the eggs then into the panko mixture pressing to coat.

Place the zucchini onto the baking sheet. Bake for 20-25 minutes until golden brown and crispy. Sprinkle with chopped parsley.

For the Lime Aioli sauce combine the mayonnaise, lime juice and zest and minced garlic in a small bowl and whisk until combined. Serve with the baked zucchini fries.

I have tried making baked zucchini fries before using regular Italian breadcrumbs, and they never turned out very good - limp and less - than - crispy. The secret is in the panko! The panko crumbs are larger in size and don't get sogged down by the moisture in the zucchini. This method would work well for other vegetables also.

Best zucchini recipe EVER! The breading stayed light and crunchy, didn't get soggy one bit - and the flavor is fantastic. My family will be eating a lot more zucchini because of this tasty recipe. The baking brings a tenderness and sweetness to the veggie that you just don't get any other way. This recipe pairs perfectly with an easy lime aioli for dipping.
