Basil Bread
Ingredients
- 3 large ripe tomatoes
- 1 package cocktail rye bread slices
- 1 package shredded mozzarella cheese
- 2 tablespoons basil or to taste
- 2 tsps oregano
- 2 tsps fresh parsley
- Virgin olive oil
Instructions
Cube the tomatoes into tiny pieces, removing the stem and core of course. Mix the tomatoes, and all herbs into 1 bowl and set in the refrigerator. Place cocktail breads one by one on a large oven tray. Brush the olive oil over each piece. Take a tablespoon of the tomato mix and place it on top of the bread. Sprinkle the cheese on top of each slice. Bake for 15 to 20 minutes or until cheese has melted. Serve right away. You may also premake this appetizer and refrigerate until your guests arrive, and then you can pop it into the oven.
