I added celery to this. Whenever I use diced celery in a delicate salad like egg, chicken, or tuna salad, I use a trick my mom taught me. You pull the tough outer strings off the stalk of celery before dicing. Using a paring knife with the flat edge against your thumb, you grab the strings at the widest cut end of the celery stalk and pull the thicker fibrous strings off.

I ended up substituting things I already had in my kitchen and it turned out great! This is a very different chicken salad but I really liked it for a change. I used celery instead of celery root. I love the crunch of celery in salads. And I chopped up bread and butter chip pickles instead of the pickled sweet peppers. I did dice up some fresh ones though to garnish on the top The potatoes in this recipe are an unexpected surprise. It's a combination chicken salad and potato salad!
