Crispy Hobo Potato Skins
You won't find cheaper and easier baked potato recipes than these Crispy Hobo Potato Skins. With only 5 ingredients, much of which you can find in your pantry or on hand in the kitchen; it's the ideal frugal recipe.
Ingredients
- 6 medium potatoes (about 2-pounds.)
- 1/4 cup melted margarine
- 1 tablespoon soy sauce
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- Scrub potatoes thoroughly and pierce with a fork. Bake until tender (about 45 minutes). Cool, then cut in quarters lengthwise and then half crosswise to form 8 sections.
- Scoop flesh from skins leaving 1/8-inch shell. Increase oven temperature to 500 degrees.
- Mix margarine and soy sauce together and brush on both sides of the skins. Sprinkle with salt and pepper.
- Place on baking sheet and bake until crisp (about 10 minutes). Serve with your favorite dip.
