These Mini Apricot Brie Bites are quick appetizers that have to make an appearance at your next party or holiday gathering. This 20-minute recipe requires minimal baking, freeing up your time for other things. This layered, finger food is made with Brie, fresh baby arugula, and sliced apricot, or whatever fruit of your choosing, and then stacked on mini-toast squares. This easy holiday appetizer recipe would be great paired with wine or simply as something for friends and family to munch on while they're waiting for the main course.

I love Brie! I've always made the block with a jam and then bake a crust around it so it's nice and gooey in the middle. These look about the same but with less mess!
