Pesto Stuffed Tomatoes
"Hasselback or Stuffed Tomatoes with pesto is a low carb, healthy and vegetarian veggie recipe perfect for dinner tonight. Instead of calling this recipe stuffed tomatoes, you could also call them Hasselback Tomatoes. Hasselback refers to slicing the tomato into an accordion pattern, causing the tomato to fan out. This gives you so many crevices to stuff the pesto mixture in. In addition, you may notice that this pesto has no olive oil. In fact it is quite dry by design. When you broil a tomato, it leaches liquid. With that in mind, I wanted to keep my topping dry. Of course, eliminating oil also eliminated calories and fat."

I have also never seen a tomato quite like this one before! My family loves hasselback potatoes stuffed with veggies, cheese, sour cream, etc. And since are huge lovers of pesto, I'm sure we would really like this recipe too! I'd also like to try this as a twist of a caprese salad with the basil leaves, fresh mozz, and olive oil- yummy!

This is a new twist on stuffed tomatoes for me. It really is a very dry pesto, but it works extremely well like this. I have to admit, I did miss the oil for the pesto, so I drizzled some olive oil over the tomatoes after they were broiled. I'll definitely be making these again for us, since my wife really liked them too.

To be honest I have never stuffed a tomato before but, having made these for a family barbecue of the past weekend, I would recommend that you give it a try because they are very good! They are a little bit fiddly to prepare but very much worth the effort.
