Radish Stuffed Snow Peas
Ingredients
- 32 snow pea pods, trimmed
- 1 cup sliced red radishes
- 8 ounces low fat cream cheese, softened
- 1 Tbsp prepared horseradish
- Salt and pepper to taste
Instructions
Blanch snow peas in boiling water for 1-2 minutes, until color brightens. Immediately plunge peas in ice water. Drain and pat dry. slit open each pea and set aside. In food processor or blender process radishes just until finely chopped. Drain on paper towel. Return to processor and add remaining ingredients. Process until smooth. Stuff snow peas and arrange on platter.
