I do like cheese and Brie. The apples are a great idea. There is also a triple cream Brie like cheese that isn't as "ripe" as brie but I don't think it would work as well. I think you want the balance of the sweetness and the ripeness together. I am definitely in on this one.

I'm so going to make this. I KNOW I will have left over cranberry sauce from Christmas day. This is also so quick and easy and no fuss. I especially like the suggestion of eating with apple slices and can't wait to try that! I love cheese. My mouth is watering while I read this recipe.
