Secret Ingredient Stuffed Mushrooms

Ingredients

  • 1 container large mushrooms
  • 1 small log of pepperoni
  • 1/2 roll Ritz crackers, crushed
  • 2 chicken bouillon cubes
  • 1 medium onion, chopped finely
  • 3 tablespoons butter
  • 1/2 teaspoon dried parsley
  • garlic powder, to taste
  • onion salt, to taste

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Wash mushrooms, separate caps from stems. Dice stems into small pieces.
     
  3. Melt butter in skillet, add onions and saute until clear.
     
  4. Add pepperoni and saute for about 1-2 minutes.
     
  5. Mix bouillon cubes with about 1 cup water. When dissolved, add to onions and pepperoni, reserving about 1/2 cup of the broth).
     
  6. Add Ritz cracker crumbs and spices. Mix well.
     
  7. Stuff mushroom caps with mixture.
     
  8. Put mushrooms in a baking pan. Pour in remaining broth.
     
  9. Bake for 15-20 minutes.

What is the weight of the container of mushrooms?

I'm guessing you have to chop the pepperoni in order for it to fit in the mushrooms?

I would like to make this however I have 2 questions... Can I use portabella mushrooms and could you use mild sausage instead of pepperoni?
