Semolina Veggie Muffins
"Indulge in a savory and healthy bake, semolina veggie muffins. It has the goodness of vegetables and semolina, which is rich in protein, B vitamins and fiber, which makes it a very healthy bake and baking as muffins makes it a win-win to attract fussy little kids. Enjoy the bake!! Ingredients ------------ Semolina – 1 cup Whole Wheat Flour – 2 Tbsp Spinach leaves (chopped) – 1/3 cup Carrot (grated) – 1/3 cup Sweet corn kernels – 1/3 cup (I used frozen sweet corn, so I boiled them before using in the recipe) Egg – 1 (Substitute it with 1/4 cup yogurt to make it eggless) Yogurt – 1/4 cup Olive oil – 1/4 cup (I used Extra Virgin Olive Oil here) Shredded cheese – 1/4 cup (I used Mexican blend cheese here, substitute it with Cheddar cheese if available, or any other) Mixed spices – 1.5 tsp ( I used a sprinkle of the following – Black pepper powder, Italian Seasoning, Red Chili Flakes and Trader Joe’s 21 Seasoning Salute, but feel free to use a sprinkle of your favorite spices) Baking powder – 1/2 tsp Baking soda – 1/2 tsp Salt – As per taste Water – 1-2 Tbsp (As per batter consistency needed, I used 2 Tbsp) "
